CUPCAKES DE ZANAHORIA Y MANZANA / CARROT & APPLE CUPCAKES

¡Hola chicos!

Sí, ya sé que he estado ausente durante muuuucho tiempo, pero he tenido mil cosas en la cabeza y sin tiempo ni siquiera para escribir en el blog… Lo siento, pero prometo ir escribiendo más a menudo e ir subiendo las recetas que he ido haciendo en estos meses de ausencia. Bueno, os cuento de qué va la receta de la entrada de hoy, que seguro que estaréis más interesados en eso jajajajaja
Pues la receta de hoy son unos deliciosos, increíbles, sabrosos, jugosos… (no sé qué más adjetivos usar) cupcakes de zanahoria y manzana. Parafraseando a Alma Obregón, a quien estoy segura que conoceréis (y en cuya receta me he basado para hacer estos cupcakes), si tuviese que describirlos sería con un “Mmmmmmmmmmmmmmmm”. Creo que son los cupcakes más perfectos que pueden existir. ¿Y su crema de queso? Madre mía… INCREÍBLE. Meterles un bocado es, como diría Enrique Iglesias, “casi una experiencia religiosa”.





La verdad es que mi relación con los dulces que llevan zanahoria data de hace ya unos añitos, cuando mi amiga Cel (¡hola, Cel!) me dio su receta de la carrot cake. Desde entonces, es una de las que más se hacen en casa. Cualquier excusa es perfecta para comerse un trozo jajajaja Bueno, pues cuando empecé a seguir a Alma y vi que hizo estos cupcakes, me dije a mí misma que tenía que hacerlos inmediatamente. Miré en la despensa y, oh, sorpresa, tenía todos los ingredientes en casa. Creo que tardé menos de 5 minutos en tener todo lo que necesitaba encima de la encimera de la cocina para ponerme a hacerlos. Y cómo estaban… Mi cara podría decirse que era como el emoticono de whatsapp de la carita con corazones y esa es la que pongo cada vez que tengo que hornear estos maravillosos cupcakes jajajaja




El último pretexto que he usado para hacerlos es para darle las gracias a mi amiga Alba, que me ha salvado la vida telefónicamente hablando. Mi teléfono decidió morirse al cumplir los dos años y ella me ha regalado el que le han dado en la nueva compañía a la que se ha pasado. Y como es de buen nacido ser agradecido, no podía más que hacerle un regalo como se merece. Pero los detalles un poco más adelante. Vamos primero con una breve historia de cómo surgieron estos deliciosos cupcakes.

De acuerdo con los historiadores gastronómicos, las zanahorias se han usado en tartas desde la Edad Media en forma de pudin[1], ya que en aquella época los edulcorantes eran escasos y muy caros, y las zanahorias, que contienen más azúcar que cualquier otro vegetal aparte del azúcar de remolacha, eran mucho más fáciles de encontrar y se usaban para hacer postres dulces. La popularidad de la tarta de zanahoria probablemente creció en Gran Bretaña debido al racionamiento durante la Segunda Guerra Mundial.

Y ahora la receta de LOS cupcakes (recordad que los ingredientes han de estar a temperatura ambiente a menos que se indique lo contrario) – modificada de la original de Alma Obregón:


Ingredientes (para 12-15 cupcakes, dependiendo del tamaño de vuestras cápsulas)

Para el cupcake:
ü  140 g de harina
ü  1 cucharadita de bicarbonato de soda
ü  1 cucharadita de canela
ü  2 huevos tamaño M
ü  115 g de azúcar
ü  120 ml de aceite de sabor suave (yo siempre uso de girasol)
ü  180 g de zanahorias
ü  175 g de manzana
ü  5 nueces peladas y troceadas (opcional – yo no se las pongo porque mi hermano tiene alergia)

Para el frosting de crema de queso:
ü  125g de creso crema frío (tipo Philadelphia – yo uso de marca blanca)
ü  60 g de mantequilla a temperatura ambiente
ü  300 g de azúcar glass
ü  1 cucharada de leche

Elaboración:
Cupcakes:
1.  Precalentamos el horno a 160ºC[2] y colocamos la rejilla a media altura.
2.  Tamizamos la harina con la canela y el bicarbonato y reservamos.
3.  En un bol, rallamos la zanahoria y la manzana, y reservamos también.
4.  En otro bol, batimos los huevos con el azúcar y el aceite.
5.  Incorporamos poco a poco la mezcla de harina.
6.  Con ayuda de una espátula de silicona, incorporamos la manzana y la zanahoria rallada (si le vamos a añadir las nueces, lo hacemos cuando esté todo bien mezclado).
7.  Rellenamos las cápsulas para cupcakes hasta la mitad o ¾ máximo de su capacidad – yo utilizo una cuchara de helado para echar la misma cantidad de masa en todas las cápsulas.
8.  Horneamos durante unos 20-22 minutos hasta que salga limpio el palillo.
9.  Cuando los saquemos, los dejamos reposar 5 minutos en la bandeja y después los traspasamos a una rejilla para que enfríen completamente.

 



Frosting de Crema de Queso:
1.  Batimos la mantequilla con el azúcar glass y una cucharada de leche hasta que sea una crema homogénea. Tened cuidado de no poner la batidora a una velocidad alta porque lo pondréis todo lleno de azúcar.
2.  Añadimos el queso crema que tiene que estar bien frío y batimos hasta que quede blanco y cremoso.




Cómo decorar los cupcakes:
1.  Cuando estén los cupcakes completamente fríos, preparamos nuestra manga pastelera con una boquilla – la que yo suelo usar es la 1M de Wilton –, y añadimos la crema de queso a la manga. Una forma muy fácil y cómoda de hacerlo es colocar la manga en un vaso alto (el de la batidora, por ejemplo).
2.  Sacamos el aire que haya en la manga y nos disponemos a decorarlos.
3.  Si queréis hacer una rosa con la crema, tenéis que poner la manga en posición perpendicular al cupcake y girarla del centro hacia afuera en el sentido de las agujas del reloj.
4.  Después ya sólo tenéis que echarle unos sprinkles a vuestro gusto y ¡a comer!



Volviendo a los cupcakes que le regalé a mi amiga, como os he mencionado antes, los decoré con fondant con la temática de la medicina, ya que ella es médica y ha empezado a trabajar hace poco en un ambulatorio y en un hospital. Como podéis ver en las fotos, hice una jeringuilla, unas tiritas, un corazón con un electro, un fonendoscopio, su nombre y un intento de hacer su cara en fondant – es la primera vez que modelo la cara de alguien y parece que no está demasiado mal jajajaja



También preparé una cajita con cartulina siguiendo el mismo tema de la medicina, así que le hice un pequeño maletín para meter los cupcakes y que así fuese un regalo totalmente personalizado.

Hey guys!

Yes, I know I haven’t written for ages, but I’ve had thousand of things in my mind and nearly no time left to write in the blog… I’m so sorry but I promise to keep on writing more often and uploading the recipes I’ve done during this period. Well, I tell you what’s today recipe, something you’ll be more interested in hahahaha
Well, today’s recipe is some delicious, incredible, tasty… (I don’t know what other adjectives I can use) carrot and apple cupcakes. Paraphrasing one of my favourite bloggers, Alma Obregón (whose recipe I have used as an inspiration), if I had to describe them it would be “Hmmmmmmmmmmmmmmmm”. I think these are the most perfect cupcakes ever. And what about their cream cheese? Oh my gosh, amazing!



The truth is that my relationship with cakes made of carrots is quite long, when my friend Celia (hi, Celia!) gave me the carrot cake recipe she used. Since then, that’s the cake I have made thousands of times. Any excuse is a good one to eat a slice hahahaha Well, when I saw that this blogger published this recipe in her web, I told myself I had to make them immediately. I had a look at the larder and I had every single ingredient I needed! In less than 5 minutes I had everything on the table and I was ready to begin doing it. And oh my gosh how lovely they were… My face was like the one with hearts on its eyes on whatsapp hahaha



The last pretext to make them is to thank my friend Alba for saving my life in terms of mobile phone lol My phone decided to die after two years of relationship and she has given me the one she got when she went to a new company. And as we say, gratitude is the sign of noble souls, so I had to do something special for her. But I’ll let you know in a bit. Let’s first explain the history of these cupcakes briefly.
According to food historians, carrots have been used in sweet cakes since the medieval period – in puddings[1], during which time sweeteners were scarce and expensive, while carrots, which contain more sugar than any other vegetable besides the sugar beet, were much easier to come by and were used to make sweet deserts. The popularity of carrot cake was likely revived in Britain because of rationing during the Second World War.

And now, let’s go with the recipe of THE cupcakes (remember that all the ingredients have to be at room temperature unless the opposite is explicitly said) – based on Alma Obregon’s recipe:

Ingredients: (for 12-15 cupcakes, depending on the size of your cupcake papers)
For the cupcake:
ü  140 gr of flour
ü  1 tsp of bicarbonate of soda
ü  1 tsp of cinnamon
ü  2 eggs (M size)
ü  115 gr of sugar
ü  120 ml of soft oil (I always use sunflower oil)
ü  180 gr of carrots
ü  175 gr of apple
ü  5 nuts (optional – I don’t add them as my brother is allergic to them)

For the frosting:
ü  125 gr of cold cheese cream
ü  60 gr of butter at room temperature
ü  300 gr of icing sugar
ü  1 tbsp of milk

How to make the cake:
Cupcakes:
1.  Preheat the oven at 160ºC[2] and place the rack at middle height.
2.  Sieve the flour with the cinnamon and the bicarbonate of soda. Save this mixture for a while.
3.  In a different bowl, grate the carrots and the apple, and safe as well.
4.  Whip the eggs in a new bowl together with the sugar and the oil.
5.  Add the mix of flour to the eggs, sugar and oil.
6.  With a silicone spatula, add the grated carrots and apple (if we are going to add some nuts, do it when everything is perfectly mixed).
7.  Place the dough in the cupcake papers until they are half full or ¾ of their capacity – I use an ice-cream spoon to use the same amount of dough in every paper.
8.  Bake for 20-22 minutes.
9.  Cool the cupcakes for 5 minutes in the oven tray and then place them on a rack to cool completely.



Cream Cheese frosting:
1.  In a bowl, whip the butter together with the icing sugar and the tablespoon of milk until it smoothes. Don’t whip too fast as you’ll get a white kitchen because of the sugar hahaha
2.  Add the cold cheese cream and whip until getting a white and soft cream.



How to decorate the cupcake:
1.  When the cupcakes are completely cool, we place a tip inside the pastry bag – I use Wilton 1M tip –, and place the cream cheese frosting inside. An easy way to do it is using a high glass and leaving the pastry bag inside and then adding the frosting.
2.  Remove the air inside the pastry bag and get ready to decorate the cupcakes.
3.  If you want to make a rose with the cream, you have to place the pastry bag at right angle with the cupcake and go clockwise, from the centre to the outside.
4.  Then, you only have to spread some sprinkles and that’s all! Bon appetite!


Going back to the cupcakes I gave my friend, as I have told you before, I decorated them with fondant pieces having to do with medicine, as she is a doctor and has just began working in a hospital. As you can see in the photos, I made a syringe, a pair of plasters, a heart with an electro, a phonendoscope, her name, and an attempt of her face – it’s the first time I shape a face with fondant and it seems that it was not a disaster hahaha


I also made a box with cardboard as if it were a doctor’s bag, so it was an entirely personalised gift.
